Acai bowl popsicles. Aka the best popsicle invention on the face of the earth.

These popsicles have been saving my booty the last 6 weeks. For those of you who missed the announcement, my husband and I are expecting a little one in just 6 short months. We honestly could not be more excited or amazed by the miracle growing inside of me.

That being said, the same miracle has been causing me to be sick, real sick. Like “I can’t even drink water without puking” kind of sick. Talking about vomit is always a good way to lead into a food post, eh?

Real talk.

I literally tried EVERYTHING to cure my morning sickness. Jolly Ranchers, smelling oils, nibbling saltines, and the list goes on. Nothing would do the trick. That was until I tried popsicles.

Popsicles are generally not my go-to summer treat. But I was desperate, and I needed to try and get something into my system. Then I realized I could make my own! And maybe, just maybe I could come up with a flavor that I would love!

When coming up with this recipe I had two goals in mind:
1. Amazing flavor
2. Nutrition – I wanted to pack as many good things for me as possible into these pops because who knew if I would be able to keep anything else down.

If you follow me on Instagram (username: katienwmn) you may know that I am obsessed with Acai bowls. I had some Sambazon smoothie packs in the freezer so I set out to turn my favorite healthy summer treat into a popsicle.

After a few tests, these incredible pops were born! I was able to include everything I love about the bowls, even the granola! When I tell people I put granola in popsicles they usually assume it gets rock hard and will break their teeth or turns into a soggy mess. In reality, the granola ends up having the consistency of a thick oatmeal cookie. It is SO good and perfectly sweetened by the honey. Everyone who tried them said the granola was their favorite part!

Another fabulous thing about these popsicles is that they are super easy to make! Being sick, the last thing I felt like doing was working in the kitchen. That and the thought of smelling things baking in the oven made me want to hurl. (Thus, the blog was on a brief hiatus. Sorry guys.) So I intentionally made this popsicle-making process quick and simple.

This is a recipe you must try! It has already become a household favorite (my husband begged me to make more after we devoured the original. batch).

I have found the pops make for a delicious, healthy breakfast on the go! Popsicles for breakfast without skimping on nutrition? Umm yes please!

Even though I am feeling much better I continue to make these popsicles and know I will continue to do so for a long time to come. Can’t wait to make these for my little one someday!

Acai Bowl Popsicles Recipe

Recipe

*Yields 10 popsicles

Smoothie Layer:
2 packs frozen Acaí smoothie packs (I use Sambazon Original Smoothie Packs from Costco)
1 banana
1/2 cup frozen mango
1/4 cup frozen pineapple
1/2 cup orange juice

Fruit Layer:
Fresh fruit, thinly sliced
I used:
Blueberries (2 blueberries per pop)
Strawberries (2 slices per pop)
Pineapple (2 slices per pop)

Granola Layer:
1/3 cup + 2 tablespoons of the Acai smoothie mixture
1 1/3 cups granola
4 tablespoon honey

1. In a blender, combine Acai smoothie packs, banana, frozen mango, frozen pineapple, and orange juice. Blend until smooth. Set aside.

2. In a medium bowl, combine 1/3 cup + 2 tablespoons of the Acai smoothie mixture, granola, and honey. Mix well until granola is evenly coated.

3. In your popsicle molds layer in the following order: Acai smoothie mixture (I did a hefty tablespoon), fresh fruit (I used 1 blueberry, 1 strawberry slice, and 1 pineapple slice per layer), and then granola mixture (I used a hefty tablespoon). Continue layering until your molds are full. Mine had 2 layers of each.

4. Insert popsicle sticks. Then chill popsicles for at least 8 hours or until frozen solid (preferably overnight).

5. Run water along outside of molds to release popsicles. (It may take a little longer than with normal pops but I promise they will come out.)
